The MCP server has no metrics surface. Add a Prometheus /metrics endpoint so the server is observable: request counts, latencies, Lunch Money API call outcomes (including 429 backoffs), tool invocation counts.

Lightweight placeholder - Kai is thinking through the metrics design in a separate thread, so hold on the specifics. This issue just reserves the work.
