docs: correct the layout tree, em-dashes, and a mismatched link #908

The Layout tree named nine entries and the repo has fifteen. Missing were clusters/ (per-cluster state for kai-server and ser8), terraform/ (AWS IAM, KMS, inventory, public assets, Tailscale), fail2ban/, sudoers/, config/, and bootstrap.sh. Two of those are substantial surfaces a reader would want to know exist, and deploy/ was described by two of its twenty entries.

The Windows bullet displayed windows-browserpicker-forgejo.md while pointing at docs/windows.md, so link text and target named different files and the displayed one does not exist.

Replaced two em-dashes with the house separator.

Left the coily gaming line alone. I had it filed as a retired spelling, but aosguard ships no gaming area, so game-server systemd ops genuinely still run through coily on kai-server and the README is accurate as written.

pre-commit run --all-files passes clean.
